Aurora Coffee is a small-batch roastery on NE Alberta. We source single-origin lots from named farms, roast them slowly on Tuesdays, and pour them on the same long oak counter every morning at 7.
Every Tuesday morning we run a 12-kilo Probat at low gas, drawing the development out longer than most. The result is a cup that keeps its origin honest — clean acidity up front, a slow honeyed tail, and almost no roast bitterness.
Sourcing, roasting, and pouring all happen in the same hundred-foot stretch of NE Alberta. It keeps things small — and a little stubborn about the details.
We buy small. Six to ten bags at a time, directly from importers who know the producers by first name. Every label tells you the farm, the elevation, and the harvest week.
Slow gas, long development, drop just past first crack. We profile each lot three times before it ever touches a paying customer’s grinder.
